><p><strong>Ingr\u00e9dients<\/strong><\/p>\n<p>Pour 4-5 personnes<\/p>\n<ul>\n<li>3,5 kg de jarret arri\u00e8re de boeuf bio des Pyr\u00e9n\u00e9es bio de Cal Grauet avec os<\/li>\n<li>250 g d&rsquo;oignon<\/li>\n<li>50 g d&rsquo;ail<\/li>\n<li>150 g de carottes<\/li>\n<li>150 g de poireaux<\/li>\n<li>200 ml de vin parfum\u00e9<\/li>\n<li>5 kg de gros sel<\/li>\n<li>1 kg de sucre<\/li>\n<li>200 g de grains de poivre noir<\/li>\n<\/ul>\n<p><strong>Pour la sauce<\/strong><\/p>\n<ul>\n<li>5 kg de chutes de boeuf bio (Poitrine, pied et c\u00f4te)<\/li>\n<li>500 g d&rsquo;oignon<\/li>\n<li>300 g de carottes<\/li>\n<li>250 gr de tomate<\/li>\n<li>100 ml de Brandy<\/li>\n<li>100 ml de vin parfum\u00e9<\/li>\n<\/ul>\n<p><strong>Pour la cr\u00e8me de patates douces r\u00f4ties<\/strong><\/p>\n<ul>\n<li>770 gr de patate douce<\/li>\n<li>100 g de beurre<\/li>\n<li>sel<\/li>\n<li>poivre noir fraichement moulu<\/li>\n<\/ul>\n<p><strong>\u00c9laboration<\/strong><\/p>\n<p>Faire mariner le jarret avec du sel, du sucre et du poivre noir pendant 8 heures (max 12 heures), en le laissant compl\u00e8tement recouvert. Retirer du sel et laver. Ficelez le morceau et faites-le dorer dans l&rsquo;huile et le beurre, dans une casserole pouvant \u00eatre couverte. Ajouter les oignons \u00e9pluch\u00e9s, la gousse d&rsquo;ail en deux, les carottes hach\u00e9es et les poireaux. Arrosez de vin. R\u00e9duire au 1\/4. Ajoutez un fond brun. Emballez sous vide (100%) l&rsquo;ensemble dans un sac de cuisson, et placez au four vapeur (100%) pendant 24 heures \u00e0 65 \u00baC. D\u00e9posez et r\u00e9servez. Conservez le jus de cuisson pour faire la sauce.<\/p>\n<p>Faire dorer le jarret \u00e0 180\u00b0C pendant 15 minutes en le baignant plusieurs fois dans la sauce r\u00e9duite pour former une cro\u00fbte croustillante. Pr\u00e9senter entier et hacher sur la table.<\/p>\n<p>Pour la sauce au boeuf<\/p>\n<p>Faire dorer les morceaux de boeuf. R\u00e9server. Faire revenir l&rsquo;oignon en brunoise \u00e9paisse, puis ajouter l&rsquo;oignon et enfin la tomate. Faire dorer jusqu&rsquo;\u00e0 retirer l&rsquo;eau. Ajouter les morceaux de boeuf et faire revenir. Ajouter le brandy et flamber. Ajouter le vin et faire r\u00e9duire. Couvrir d&rsquo;eau et cuire pendant 2,5 heures. Laisser infuser 30 minutes. Filtrer, refroidir et d\u00e9graisser. R\u00e9duire au go\u00fbt et donner de la texture.<\/p>\n<p>Nous utiliserons cette \u00ab glace \u00bb de b\u0153uf pour glacer le jarret au four et former cette cro\u00fbte brillante et croustillante, et comme sauce au beurre.<\/p>\n<p>Pour la cr\u00e8me de patates douces r\u00f4ties<\/p>\n<p>Faites r\u00f4tir la patate douce, envelopp\u00e9e dans du papier d&rsquo;aluminium, au four \u00e0 convection \u00e0 180 \u00b0 C jusqu&rsquo;\u00e0 ce qu&rsquo;elle soit tendre. Laisser reposer, peler et broyer dans le \u00ab\u00a0Termomix\u00a0\u00bb jusqu&rsquo;\u00e0 obtenir une p\u00e2te fine.
